Wild Foods

Wild Foods is a new program from PBS, starting on April 1st, 2026. The series follows Kevin Chap, a forager, environmentalist, and educator, as he traverses America in search of new ways to redefine our relationship with natural foods.

His journeys took him to Vermont, Maine, Montana, and Arizona, where he learned local culinary and foraging techniques from locals in the area. His journey wrapped up, though, upon a visit to one of Upstate New York's most important natural landmarks: The Adirondack Mountains...

A Trip to the ADK

The sixth, and final episode of the show's first season takes place within the Adirondack Mountain Range. In the episode, Chap dives into Haudenosaunee Nation’s history, and learns their foraging techniques. By using those, he puts together a delicious looking, all natural, venison schnitzel.

Later in the episode, he heads down to Albany to meet Chef Elliott Vogel. At the time Vogel was working at The Delaware in Albany (he is currently the executive chef at Panza’s Restaurant in Saratoga Springs), and taught Chap one simple lesson: "Ignoring nature is one of the worst things you could do".
