How Did The Skinny Pancake Come About?
Benjy Adler and his brother got started 18 years ago when they started Skinny Pancake with a food cart they made from wood scraps out of their parents' kitchen floor. They say that the core of their business is eating local. They say that Skinny Pancake will always support nearby businesses. They are sourcing local products from various farms throughout the Capital Region and the state.
What Kinds of Crepes Do They Serve and is That All They Have?
No. Although they serve crepes for lunch, dinner, and dessert and feature some amazing concoctions with crepes, they also serve burgers, sandwiches, salads, and poutine. They are widely known throughout Vermont for their Jonny Crepe. It is made with Vermont Maple pulled pork, caramelized onions with cheddar inside a cornmeal crepe. There is a Hot Apple Crumble dessert crepe that has local apple compote and toasted streusel wrapped in a crepe.
