A popular Vermont creperie is preparing to open its eighth location in downtown Albany.

Is there anything better than a stack of pancakes or some delicious crepes to start your day? If sweet breakfast treats are your jam (See what I did there?), you are going to want to check out a new restaurant coming to the old Pearl Street Pub location.

The Times Union is reporting The Skinny Pancake plans to open its eighth location in the Capital Region. The small restaurant chain focused on locally sourced ingredients started in 2003 as a food truck in Vermont and they began opening physical restaurants in 2007 with their first location in Burlington. They also operate locations in Stowe, Hartford, and Montpelier. The Albany restaurant would be their first foray into New York state.

If you check out the menu for the Burlington location, they offer crepe-based options for breakfast, lunch, dinner, AND dessert. With everything from a breakfast burrito-style crepe to a pizza crepe, ya gotta love the creape-tivity (See what I did again there?) of this menu. They also offer some classic sandwiches and sides.

According to a post on their Instagram, the Skinny Pancake says they have "...been eyeing the Capital Region for a bit now, and despite some pandemic interruptions, have broken ground...right in the heart of Downtown Albany." The new restaurant is targeting a September opening and promises some menu twists that will "...celebrate the local food scene of Upstate New York.⁠"
