Bigger More ‘Eggcellent’ Location For Popular Albany Korean Restaurant
A popular Korean restaurant on Madison Avenue in Albany mainly did takeout during the pandemic through their small location. They are now opening a larger location in Rensselaer that will be their flagship restaurant.
A New Korean Restaurant Opening Near the Rensselaer Train Station
The Korean restaurant is called "Son of Egg" and they will be looking to open a bigger restaurant right across from the Amtrak station in Rensselaer. The space is the old Baking You Crazy which was a cafe and bakery right near the train station.
Why The New Space Near the Train Station?
The manager of Son of Egg, Justin Ko, told the Times Union that they are very busy and need more room to prep food. Right now the kitchen area is too small to prep and cook. They have been looking for someplace bigger. Justin owns the restaurant with his mom Min Cho Ko. Her husband works for GlobalFoundries in Malta.
What Does This Building Have?
For one thing, it is four thousand one hundred twenty-five square feet. It has a full basement along with freezers, a commercial kitchen, walk-in coolers, and more. There is off-street parking too. A cafe that seats twenty-five along with a bar is on the first level and there is room on the second level for more seating.
When Will it Open & What Will They Serve?
They are hoping to open on April 21st and their hours will be similar to the Madison Avenue location which are Monday to Saturday 10 am until 8 pm and closed on Sunday. There is a possibility that they could open up earlier if the demand is there. The first train to NYC is at 5:55 am.
Son of Egg will offer many of the same items as they do at their other location. They do have breakfast sandwiches too.
They will also serve Korean signature dishes like bulgogi and bibimbap along with bowls, sandwiches, and more. With the larger kitchen space, they are hoping to develop and add new dishes.
