When I saw Instagram posts promoting the opening of Niko's Deli, it brought me back to a conversation about a year ago. Davina Resciniti, the aunt of Niko Dinovo, told me the family would be stronger and do whatever it takes for the teenage boy from Colonie who was given a 1% chance of survival after a horrific accident left him burned badly. One year later, Niko is still recovering at Westchester Medical Center's burn unit and the family is opening up the deli in his honor.

Today is the grand opening of Niko's Deli at 462 Albany-Shaker Road and if their social media is any indication, the food looks delicious.  Serving pizza, sandwiches, home made mozzarella sticks and of course a specialty, "The Champ" for Niko himself. Davina remains incredibly positive about the progress of her nephew and thankful for the support of the community. Her message is simple, sweet, and inspiring, "This is where God and Niko brought us, it's time to give back!"
