Bethany’s Chicken Chorizo Chowder Recipe—Yum!
If you want a super hearty soup that makes you warm and toasty on a cold day, freezes really well and feeds a crowd, this is your new favorite recipe! It's so easy it's ridiculous!
I am on a low-carb, high-fat diet, so this recipe works really well for my dietary restrictions. You could make some simple changes to this recipe to make it work for you!
Bethany's Chicken Chorizo Chowder
Ingredients:
- 1 package of chorizo sausage - hot or mild depending on what you like.
- 1 pound of chicken - breast or thighs - whatever you have laying around!
- 1 box of beef stock (and one box of water)
- 1 pint of heavy cream
- 1 bag of frozen corn
- 1 bag of frozen peas
- Salt, pepper, onion powder, chili powder, cumin, garlic powder
Process:
Brown the chorizo in a pan, throw it into a crock pot with raw chicken, beef stock, water and heavy cream. Toss salt, pepper and the rest of the spices (be liberal, you really can't mess it up) in and leave on high for four hours. Turn to low, pull the chicken apart, put the peas and corn in and leave it for another hour or so.
Eat.
