Once again Grandma Carrie is in the Christmas spirit. As we walk into her little kitchen in the North Country, she's playing that classic Kenny Rogers and Dolly Parton Christmas CD, as she prepares a dish from my Grandfather's sister, Vivian Waite.

Golden Glow Gelatin Mold

2 cans(8 oz each) crushed pineapple

30 large marshmallows

1 package (6 oz) lemon jello

2 cups boiling water

1 package (3 oz) soft cream cheese

1 cup cold water

1 & 1/2 cups shredded carrots

leaf lettuce and lemon slices to garnish if desired

Drain pineapple, reserve juice
Set pineapple aside for last
In saucepan combine juice and marshmallows
Cook and stir over low heat until marshmallows are melted
Remove from heat
Dissolve gelatin in 2 cups boiling water
Add cream cheese stir until dissolved and thoroughly blended
Stir in 1 cup cold water and the marshmallow mixture
Chill until partially set
Fold in carrots and pineapple
Pour into jello mold or 6 cup mold coated with cooking spray.
Refrigerate until set
Unmold on to lettuce lined serving plate
Garnish with lemon if desired
